Peppered Wallaby Fillet

    Step1

    Pre-heat oven to 200oC

    Step2

    Mix salt and peppers together and roll wallaby fillet to coat and set aside

    Step3

    Combine pepperberries, blackberries, water and sugar in a saucepan and bring to a boil. Remove from heat and blend — pass-through a sieve to remove seeds

    Step4

    Melt butter in pan and sear wallaby on all sides for 2 seconds on each side

    Step5

    Transfer to oven and bake for approximately 5 minutes until medium rare

    Step6

    Rest for 5 minutes and slice into medallions.
